Since they break down rapidly, simple sugars provide a quick source of energy.

 Simple vs. Complex Sugars
Sugars are categorized into simple and complex carbohydrates based on their structure and how quickly they’re digested:

Simple Sugars: These are single (monosaccharides) or double (disaccharides) sugar molecules. Monosaccharides include glucose, fructose, and galactose, while disaccharides include sucrose (table sugar), lactose (milk sugar), and maltose.

Complex Carbohydrates: Complex carbs are polysaccharides, or longer chains of sugar molecules. 2. **Absorption and Transport**: The glucose is then absorbed into the bloodstream, causing blood sugar levels to rise. The pancreas releases insulin to help move glucose from the bloodstream into cells to use as energy.
